☕️ Coffee with Luke: Let’s Taco ’Bout It – A Classic Favourite

Hey friends, welcome back to another delicious edition of Coffee with Luke—the series where I combine my love of food, people, and great conversations. Today, we’re diving into one of my all-time favourite dishes, something that never fails to bring a smile to my face and a growl to my stomach—tacos. 🌮

If you know me well, you’ll know I’m obsessed with tacos. There’s just something about the crispy crunch (or soft fold!) of a taco shell packed with savoury meat, fresh veggies, and creamy toppings that hits the spot every single time. Whether it’s Taco Tuesday, weekend catch-ups with mates, or just a solo dinner with Netflix, tacos are my go-to comfort food.

So today, I thought I’d share a Classic Tacos Recipe that’s super easy to make, packed with flavour, and perfect for sharing with the people you care about. Grab a coffee (or maybe a margarita 🍹), and let’s taco ’bout how you can bring a fiesta to your kitchen!


🌮 Classic Tacos Recipe

🛒 Ingredients:

  • 500g beef mince

  • 1 tablespoon oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon smoked paprika

  • 1 teaspoon chilli powder (adjust to taste)

  • Salt and pepper to taste

  • 8 taco shells or tortillas

  • 1 cup shredded lettuce

  • 1 cup diced tomatoes

  • 1 cup grated cheddar cheese

  • 1 cup sour cream

  • Fresh coriander leaves, for garnish

  • Lime wedges, for serving


👨‍🍳 Instructions:

1. Prepare the Beef Filling

Start by heating the oil in a large frying pan over medium heat. Toss in your finely chopped onion and garlic, and let them sauté until the onion turns soft and translucent. This is where the aroma begins to fill your kitchen and your stomach starts rumbling.

Add the beef mince and break it apart with a wooden spoon. Cook it through until it's beautifully browned and sizzling.

Now, here's the magic: add the cumin, coriander, smoked paprika, chilli powder, salt, and pepper. These spices are what give tacos that iconic depth and warmth. Stir everything through and let it cook for another five minutes so the flavours can mingle and soak into the beef. Trust me—it’s worth it.


2. Warm the Taco Shells

While your beef is getting all delicious, warm your taco shells or tortillas according to the instructions on the packet. I personally love a good crispy shell for that satisfying crunch, but soft tortillas have their own charm too.


3. Assemble the Tacos

Now comes the fun part—assembling your tacos!

Grab a warm shell and spoon in that spicy, juicy beef. Then layer it with shredded lettuce, juicy diced tomatoes, and a generous sprinkle of grated cheddar cheese.

Top it off with a dollop of sour cream and a sprinkle of fresh coriander (if you’re a coriander lover like me). It’s a flavour bomb in every bite.


4. Serve and Enjoy

Place your beautiful tacos on a platter and serve with lime wedges on the side. A quick squeeze of lime over the top adds a zesty, fresh kick that takes it to the next level.

  • Don’t Skip the Sour Cream: A generous dollop of sour cream adds a cool, creamy balance to the spiced beef—an absolute must in my book!

  • Try a Twist: Not into beef? No worries. You can swap it out for chicken, pork, or even a plant-based mince if you’re going vegetarian.

  • Spice It Up or Down: Adjust the chilli powder based on your taste. I like a bit of a kick, but you do you.
